Garbanzo-Cauliflower Curry

1/3 cup water

1 onion -- chopped

1 green bell pepper -- chopped

1/2 cup chopped red bell pepper

1 cup sliced fresh mushrooms

1 cup cut green beans

1 teaspoon minced fresh garlic

1 teaspoon minced fresh ginger

1 tablespoon curry powder

14 1/2 ounces canned chopped tomatoes

14 1/2 ounces canned garbanzo beans -- drained and rinsed

1/2 cup regular or spicy V-8 juice

2 cups cauliflower florets

2 cups tightly packed baby spinach leaves

2 tablespoons cornstarch mixed in

1/4 cup cold water

freshly ground black pepper

 

Preparation Time: 25 minutes

Cooking Time: 20 minutes

Servings: 6 to 8

 

Place the water in a large pot with the onion, bell peppers, mush- rooms,

green beans, garlic, and ginger. Cook, stirring occasionally, for 5

minutes. Add the curry powder and mix in well. Add the tomatoes, garbanzo

beans, and V-8 juice. Bring to a boil. Stir in the cauliflower and cook

for 10 minutes. Add the spinach and cook an additional 5 minutes. Add the

cornstarch mixture and cook and stir until thickened. Season to taste with

black pepper.

Amount Measure Ingredient -- Preparation Method

1 1/4 cups fat-free hummus

1 large fat-free prepared pizza crust

1/4 cup chopped yellow bell pepper

1/4 cup chopped canned roasted red pepper

10 thin slices Japanese eggplant

2 slices sweet onion

separated into rings

2 tablespoons chopped fresh basil

2 tablespoons sliced black olives -- (optional)

 

Preparation Time: 15 minutes

Cooking Time: 12 minutes

Servings: 8

 

Preheat the oven to 450 degrees.

 

Spread the hummus evenly over the pizza crust. Layer the remaining

ingredients over the hummus. Bake for 12 minutes.
