Guest guest Posted August 6, 1999 Report Share Posted August 6, 1999 Garbanzo-Cauliflower Curry Mediterranean Pizza * Exported from MasterCook * Garbanzo-Cauliflower Curry Recipe By : McDougall Program for Women, page 301 Serving Size : 6 Preparation Time :0:26 Categories : Beans And Legumes Main Dishes, Vegetarian Mcdougall Program For Women Vegetables Amount Measure Ingredient -- Preparation Method -------- ------------ -------------------------------- 1/3 cup water 1 onion -- chopped 1 green bell pepper -- chopped 1/2 cup chopped red bell pepper 1 cup sliced fresh mushrooms 1 cup cut green beans 1 teaspoon minced fresh garlic 1 teaspoon minced fresh ginger 1 tablespoon curry powder 14 1/2 ounces canned chopped tomatoes 14 1/2 ounces canned garbanzo beans -- drained and rinsed 1/2 cup regular or spicy V-8 juice 2 cups cauliflower florets 2 cups tightly packed baby spinach leaves 2 tablespoons cornstarch mixed in 1/4 cup cold water freshly ground black pepper Preparation Time: 25 minutes Cooking Time: 20 minutes Servings: 6 to 8 Place the water in a large pot with the onion, bell peppers, mush- rooms, green beans, garlic, and ginger. Cook, stirring occasionally, for 5 minutes. Add the curry powder and mix in well. Add the tomatoes, garbanzo beans, and V-8 juice. Bring to a boil. Stir in the cauliflower and cook for 10 minutes. Add the spinach and cook an additional 5 minutes. Add the cornstarch mixture and cook and stir until thickened. Season to taste with black pepper. Spread the hummus evenly over the pizza crust. Layer the remaining ingredients over the hummus. Bake for 12 minutes.
