Here are some Quaker recipes I entered into MC to get myself motivated. JoAnn * Exported from MasterCook * Berry and Apricot Crepes - Quaker Oat Bran Recipe By : Quaker Oat Bran Cookbook Serving Size : 5 Preparation Time :0:00 Categories : Fruits Crepes Amount Measure Ingredient -- Preparation Method -------- ------------ -------------------------------- 3/4 cup Quaker Oat Bran hot cereal -- uncooked 1 teaspoon baking powder 1 cup skim milk 3 egg whites -- slightly beaten 1 tablespoon liquid vegetable oil margarine 1 jar apricot preserves -- 12 oz jar 2 tablespoons apple juice Or dry white wine 2 cups sliced strawberries -- 1 pint 3/4 cup fresh blueberries Or thawed frozen berries 1 tablespoon chopped fresh mint Or 1 teaspoon mint leaves Combine oat barn and baking powder; add combined milk, egg whites and margarine, mixing well. Heat 6 to 7 inch crepe pan or skillet over medium heat. Lightly spray pan before making each crepe. Pour about 1/4 cup batter onto hot prepared pan; immediately tilt pan to coat bottom evenly. Cook 1 to 1 1/2 minutes or until top looks dry. Turn; cook an additional 1 minute. Cool. Layer between sheets of waxed paper. Combine preserves and wine (or juice); mix well. Combine 3 tablespoons preserve mixture, strawberries, blueberries and mint; mix lightly. Spoon about 2 tablespoons fruit mixture along less evenly browned side of each crepe. Fold or roll up sides to cover filling. Top each serving with 2 tablespoons remaining preserve mixture. Garnish with whole strawberries, blueberries and fresh mint, if desired. Serve immediately. Makes 5 servings. Cool on wire rack; cut into bars. Store tightly covered. Microwave instructions: Combine oat bran, flour, sugar and 1/3 cup cocoa. Add combined banana, 1/4 cup margarine, corn syrup, egg whites and vanilla; mix well. Pour into 9 inch microwaveable pie plate, spreading evenly. Place in microwave on inverted microwaveable plate. Microwave at HIGH 4 minutes 30 seconds to 5 minutes or until edges are firm to touch, rotating every 2 minutes. To test for doneness, the surface is firm to the touch and the center may appear slightly wet and soft. Cool: cut into wedges. Store tightly covered. Top with strawberry halves, if desired.
