Sesame Noodle Salad with Hot Peanuts

12 ounces Asian egg noodles

2 carrots -- fine julienned

1/2 cucumber -- 1/2-inch cubes

4 ounces celeriac -- fine julienned

6 scallions -- finely sliced

8 ounces waterchestnuts, canned -- drained and finely sliced

6 ounces bean sprouts -- rinsed

1 small fresh green chile pepper -- seeded and finely chopped

2 tablespoons sesame seeds

1 cup peanuts

*For the Dressing:

1 tablespoon dark soy sauce

1 tablespoon light soy sauce

1 tablespoon honey

1 tablespoon rice wine or sherry

1 tablespoon sesame oil

 

Cook noodles in boiling water, following the instructions on the package. Drain,

refresh in cold water, then drain again. Transfer to a large mixing bowl.

 

Mix noodles with all the prepared vegetables.

 

Combine the dressing ingredients in a small bowl, then toss into the noodle and

vegetable mixture. Divided the salad onto plates for serving.

 

Toast sesame seeds for 5 minutes and peanuts for 10 minutes: toast them together

in a preheated 400F oven but on separate cookie sheets for easy removal.

 

Sprinkle the seed and peanuts evenly over each portion of the noodle salad and

serve.
