Creamy Cilantro-Garlic Dressing

2 cups cilantro leaves

1 teaspoon minced fresh garlic

1/8 cup water

1 10.5 oz pkg lite silken tofu

1 tablespoon lemon juice

1 tablespoon soy sauce

 

Place the cilantro, garlic, and water in a food processor. Process until

blended. Add the remaining ingredients and process until smooth. Chill at

least 2 hours before using.

1/4 cup rice vinegar

1/4 cup water

1/4 teaspoon minced fresh garlic

1/4 teaspoon minced fresh ginger root

 

Combine all ingredients in a blender and process until smooth. Store in a

covered jar in the refrigerator.
