2 cups uncooked pasta shapes

(rotelle or rotini or shells etc.)

2 1/2 cups broccoli florets

1 1/2 cups sliced carrots

1 medium red bell pepper -- chopped

1/4 cup finely chopped red onion

1/4 cup frozen corn kernels -- thawed and drained

1 tablespoon olive oil

1 tablespoon finely chopped fresh basil leaves

3 cloves garlic -- minced

1 teaspoon red wine vinegar

Salt and pepper to taste

 

This salad has all a recipe can offer--it's a snap to make and it's good

for you!

 

Prepare pasta according to package directions. Rinse with hot water and

drain.

 

Meanwhile, steam broccoli and carrots separately until crisp-tender. Place

in a large mixing bowl or salad bowl. Add red pepper, onion and corn.

 

In a 1-cup measure, combine oil, basil, garlic, vinegar, salt and pepper to

taste. Add to broccoli mixture. Mix well. Add hot pasta and toss to

coat. Serve warm. Makes 4 servings.

2 cups water

1 cup kamut or spelt flakes

8 Italian frying peppers

each about 5 to 6 inches long

1 tablespoon olive oil

1 medium onion -- diced

2 cloves garlic -- minced

2 cups broccoli florets -- diced

2 scallions -- diced

2 tablespoons finely chopped parsley

1 teaspoon ground cumin

1 teaspoon ground coriander

1/2 cup crumbled goat or feta cheese

Salt and pepper to taste

 

Kamut and spelt flakes make a great basis for vegetables stuffings. This

dish uses the light yellowish-green Italian frying peppers; they have fewer

seeds to fuss with, and a perfectly-shaped cavity that lets little of the

delicious stuffing escape.

 

Bring water to a boil in sauce pan. Stir in kamut or spelt flakes. Simmer

gently, covered, until water is absorbed, about 15 to 20 minutes.

 

Slice off the very tops of the trying peppers, then carefully cut away

seeds. Leave peppers whole.

 

Heat oil in a small skillet. Add onion and garlic; saute until onion is

translucent. Add broccoli and saute, covered, until crisp-tender.

 

Preheat oven to 350 degrees. In a mixing bowl, combine cooked grain

flakes, broccoli mixture and all remaining ingredients except peppers.

Stuff mixture into peppers, and arrange in a shallow, lightly oiled

casserole. Cover and bake for 30 to 40 minutes, or until peppers are

tender. Salt and pepper to taste. Makes 4 main-dish servings or 8

side-dish servings.

1 teaspoon pureed fresh gingerroot

1 tablespoon soy sauce

1 teaspoon sesame oil

1 tablespoon lemon or orange juice

2 pounds broccoli florets and stalks -- trimmed & peeled

cut diagonally into 1/2-inch slices

1 tablespoon slices

Freshly ground pepper

preferably white muntok

 

This dressing for the broccoli in this recipe can be used on any seasonal

green

 

Whisk together ginger, soy sauce, oil and lemon juice or orange juice in a

shallow serving bowl. Set aside.

 

Steam broccoli until crisp-tender. Transfer to serving bowl and toss with

ginger sauce. Sprinkle with sesame seeds and pepper. Makes 6 servings.
