Here are two potato recipes for your grill:

Amount Measure Ingredient -- Preparation Method

8 medium thin-skinned white potatoes -- thinly sliced

1 onion

sliced and separated into rings

3 tablespoons soy sauce

1/8 teaspoon paprika

freshly ground black pepper -- several twists

 

Preparation Time: 10 minutes

Cooking Time: 1 1/2 hours

Servings: 4 to 6

 

Preheat the oven to 350 degrees.

 

Place a large sheet of heavy-duty aluminum foil over a 15 x 10-inch baking

tray. Place an identical layer of parchment paper over the foil. Layer

the potatoes and onion rings on the parchment paper in the center of the

baking tray. Drizzle the soy sauce over the potatoes and onions, then

sprinkle with paprika and pepper. Fold over the parchment paper to enclose

the vegetables, then wrap securely in the foil. Bake on the baking tray

for 11/2 hours.

 

Hint: This is an easy, delicious way to took potatoes and there is no pan

to clean up afterward. To cook on a grill just put the foil on the grill

rack and cook until the potatoes are done. II' you use fewer potatoes, you

will have fewer layers and this will shorten the cooking time to about 1 hour.

6 medium Yukon Gold potatoes

1/2 cup fat-free sauce

such as barbecue or teriyaki or Cajun

 

Preparation Time: 5 minutes

Cooking Time: 13 to 15 minutes

Grilling Time: 10 minutes

Servings: 4

 

Wash the potatoes and prick them all over with a fork. Place on a paper

towel in the microwave. Microwave on high for 13 to 15 minutes, turning

several times, until a fork easily pierces them, but they are not too soft.

Remove from the microwave and cool slightly.

 

Cut the potatoes in half lengthwise. Cut a thin slice off the opposite

side so that there are two peeled, flat surfaces. Brush the potatoes with

the sauce and grill over medium heat, turning and brushing with sauce until

they are golden brown, about 10 minutes.

 

Hint: You can use other potatoes in this recipe; pick medium, thin-

skinned, firm potatoes and follow the directions above.
