Carrot Coins With Two Corianders

2 pounds carrots

5 scallions

1 cup fresh cilantro leaves

*DRESSING:

5 tablespoons fresh lemon juice

2 tablespoons fresh orange juice

2 tablespoons white wine vinegar

1 teaspoon ground cumin

1 teaspoon ground coriander

2 teaspoons honey

Salt and freshly ground pepper -- to taste

 

Preparations: Peel carrots and cut into 1/8-inch thick slices. Thinly slice the

white bulb of scallions.

 

1. In a large pot of boiling water, cook carrots for 2 minutes. Rinse under cold

water to stop cooking, and drain. In a large bowl, combine carrots, scallions

and 3/4 cup of cilantro.

 

2. In a small bowl, whisk all dressing ingredients together until smooth. Toss

carrot mixture with dressing and sprinkle with remaining cilantro leaves.
