Apple 'n Spice Muffins

1 1/4 cups all-purpose flour

1/2 cup cornmeal

1/3 cup sugar

1 teaspoon baking powder

1 teaspoon ground cinnamon

1/2 teaspoon baking soda

1/4 teaspoon salt

1/4 teaspoon ground ginger

1 3/4 cups shredded Golden Delicious apple

3/4 cup low-fat buttermilk

2 tablespoons vegetable oil

1 large egg -- lightly beaten

Cooking spray

2 teaspoons sugar

1/4 teaspoon ground cinnamon

 

Preheat oven to 400º.

Combine first 8 ingredients in a large bowl; make a well in center of mixture.

Combine apple, buttermilk, oil, and egg in a bowl; stir well. Add to dry

ingredients, stirring just until moist.

Divide batter evenly among 12 muffin cups coated with cooking spray. Combine

remaining ingredients; sprinkle over muffins. Bake at 400º for 20 minutes or

until golden. Remove from pans immediately. Serve warm.
