I just found it while I was surfing for something completely different: Nellie O'Leary's Irish Soda Bread approx prep time: 30 min baking: 1 hour submitted by: Nancy Davis ingredients: 4 cups all-purpose flour 1 cup sugar 4 tsp baking powder 1/2 tsp salt 1/2 tsp baking soda 1 stick melted butter (1/4 lb) 1-1/2 cups raisins 2 Tbsp caraway seeds 1-1/2 cups buttermilk 1 egg, slightly beaten Stir together the flour, sugar, baking powder, salt and baking soda. Mix in the melted butter, raisins and caraway seeds. Combine buttermilk with slightly beaten egg. Make a well in the center of the batter. Pour liquid in and stir into flour mixture. Do not overmix. Place dough in large cast-iron frying pan, well-buttered. Use a knife to make a cross on the top, cutting two deep gashes. Moisten with melted butter. Bake at 375F (200C) for an hour, or until golden brown (the dough will shrink from the sides of the skillet as it nears done-ness). From Nellie T.
