Well, at least it has Irish in the title. * Exported from MasterCook * Irish Spring Soup Recipe By : The 20/30 Fat & Fiber Diet Plan, by Mirkin & Fox, page 100 Serving Size : 4 Preparation Time :0:00 Categories : Grains And Cereals Soups And Stews Vegetables Mirkin's 20/30 Fat & Fiber Amount Measure Ingredient -- Preparation Method -------- ------------ -------------------------------- 6 cups onion soup made from dried or canned concentrate plus water 1 cup rolled oats -- uncooked OR 2 cups cooked oat groats OR other whole grains of your choice 1 teaspoon dried oregano 1 pinch cayenne pepper -- or to taste 1/2 pound asparagus cut into 1-inch pieces 1/4 cup chopped fresh flat-leaf parsley 10 ounces fresh spinach -- stems removed, leaves torn into small pieces OR 10-oz. package frozen spinach Lemon wedges Freshly ground black pepper Combine the onion soup, oats, oregano and cayenne in a large pot and bring to a boil. Reduce heat and simmer 5 to 10 minutes. Stir in the asparagus and spinach and simmer just until the asparagus is tender, about 5 minutes. Adjust the seasonings and sprinkle with the parsley. Serve with lemon wedges and freshly ground pepper. Yield: 4 to 6 servings, Calories: 156, Fat: 3g, Fiber, 5 g.
