Banana-Pineapple Ice

Recipe By : The 20/30 Fat & Fiber Diet Plan, by Mirkin & Fox

Serving Size : 1 Preparation Time :0:00

Categories : Desserts Mirkin's 20/30 Fat & Fiber

Fruits

Amount Measure Ingredient -- Preparation Method

-------- ------------ --------------------------------

4 frozen bananas

1 cup canned crushed pineapple with its juice

Whenever you have ripe (not black) bananas that you can't use up fast

enough, peel them, wrap them in plastic wrap or put them in plastic freezer

bags, and freeze. You can use them in fruit smoothies or this instant

dessert!

Process the bananas and pineapple in a blender until pureed. Pour into

glasses and serve.

Variations: Needless to say, this has endless possibilities. Add some

frozen strawberries or any other frozen fruit that appeals to you. Add a

little liqueur- any flavor-or rum. Mix in some cooked grains before blending.

Yield: 4 servings, calories: 139, fat: 1g, fiber: 4g.

Serving Size : 1 Preparation Time :0:00

Fruits

Amount Measure Ingredient -- Preparation Method

-------- ------------ --------------------------------

1 ripe mango

peeled and cut in chunks

3 cups honeydew melon chunks

1 tablespoon fresh lime juice

1/2 cup water

1 cup cooked quinoa

2 tablespoons brown sugar -- if needed

OR equivalent sweetener

Combine the mango, melon, lime juice and water in a blender and puree until

smooth. Stir in the quinoa. Add the sugar or sweetener if necessary

(mixture will taste less sweet when frozen).

Freeze the mixture in an ice cream freezer according to manufacturer's

directions. Or pour into a shallow pan and freeze, stirring occasionally,

until slushy. (If it freezes solid, cook 1 minute in a microwave oven to

return it to sherbert texture.)

Yield: 4 to 6 servings, calories: 134, fat: 1g, fiber: 2g.
