These desserts use the Dessert Spice Blend that I posted the other day and

am reposting. All of the recipes include grains.

Amount Measure Ingredient -- Preparation Method

3 tablespoons ground cinnamon

1 tablespoon ground nutmeg

1 tablespoon ground ginger

1 teaspoon ground cloves

1 teaspoon ground cardamom

1 teaspoon ground mace

 

Hot breakfast cereals and whole grain desserts can be made more delicious

with a cinnamon-based spice blend. Find a good " Apple Pie Spice " or

" Pumpkin Pie Spice " in your supermarket or make your own with this recipe.

 

Mix all ingredients together in a small bowl. Store in an airtight container.

 

Yield: about 1/4 cup, calories: 33 per tbls, 1g fat, 1 gram fiber

Fruits

 

Amount Measure Ingredient -- Preparation Method

3 cups mixed dried fruit -- (1 pound)

Grated rind of 1 lemon

1 cup toasted wheat germ

plus more for rolling

1/2 teaspoon Dessert Spice Blend

(see separate recipe)

2 tablespoons chocolate-orange liqueur -- (optional)

 

Place the fruit in the basket of an electric steamer. Fill the base with

water to the lowest line. Steam the fruit 15 minutes or until soft.

Process the fruit in a food processor until finely chopped. Stir in lemon

rind, wheat germ, spice blend and liqueur, if using. Shape into small

(1/2-inch) balls and roll in additional wheat germ.

 

Variations: Add festive colored sugar to the wheat germ used for rolling

the balls. Use packaged mixed dried fruits or make your own combination of

your favorites.

 

Yield: 8 to 10 servings, calories: 147, fat: 1g, fiber: 5g.

Mulled Pears

Fruits

 

Amount Measure Ingredient -- Preparation Method

6 firm pears

cut into wedges and cored

1/2 cup golden raisins

1 cup red wine

1 cup water

1 teaspoon fennel seeds

1/2 teaspoon Dessert Spice Blend

(see separate recipe)

1/4 teaspoon ground nutmeg

1 cup cooked barley

OR other whole grains of your choice

 

Combine all ingredients except the grains in a saucepan, bring to a boil

and simmer, covered, 20 minutes or until the pears are tender. Stir in the

cooked grains. Serve warm or at room temperature.

 

Yield: 6 to 8 servings, calories: 184, fat: 1g, fiber: 6g.

Two-Grain Tropical Treat

Mirkin's 20/30 Fat & Fiber Fruits

 

Amount Measure Ingredient -- Preparation Method

16 ounces canned crushed pineapple

drained and juice reserved

1/2 cup quick-cooking rolled oats

1/4 cup rum

1/2 teaspoon Dessert Spice Blend

(see separate recipe)

1/4 teaspoon ground ginger

1 cup water

1 pinch salt

1/2 cup raisins

2 cups cooked oat groats -- or quinoa,

OR other whole grains of your choice

2 kiwi fruit -- peeled and sliced

 

Bring 1/2 cup of the pineapple juice, the oats, rum, spice blend, ginger,

water and salt to a boil in a small saucepan. Reduce heat and simmer 5

minutes, stirring frequently, until thick and smooth. Stir in the

pineapple, raisins and cooked oat groats and simmer, stirring occasionally,

5 to 10 minutes. Cool slightly or chill before serving. Garnish with the

kiwi slices and serve.

 

Yield: 6 to 8 servings, calories: 158, fat: 1g, fiber: 3g.
