Find a good " Apple Pie Spice " or " Pumpkin Pie Spice " in your supermarket or make your own with this recipe. Mix all ingredients together in a small bowl. Store in an airtight container. Fill the base with water to the lowest line. Steam the fruit 15 minutes or until soft. Process the fruit in a food processor until finely chopped. Stir in lemon rind, wheat germ, spice blend and liqueur, if using. Shape into small (1/2-inch) balls and roll in additional wheat germ. Variations: Add festive colored sugar to the wheat germ used for rolling the balls. Use packaged mixed dried fruits or make your own combination of your favorites. Stir in the cooked grains. Serve warm or at room temperature. Yield: 6 to 8 servings, calories: 184, fat: 1g, fiber: 6g. Converted by MC_Buster. - - - - - - - - - - - - - - - - - - * Exported from MasterCook * Two-Grain Tropical Treat Recipe By : The 20/30 Fat & Fiber Diet Plan, by Mirkin & Fox, page 149 Serving Size : 1 Preparation Time :0:00 Categories : Desserts Grains And Cereals Mirkin's 20/30 Fat & Fiber Fruits Amount Measure Ingredient -- Preparation Method -------- ------------ -------------------------------- 16 ounces canned crushed pineapple drained and juice reserved 1/2 cup quick-cooking rolled oats 1/4 cup rum 1/2 teaspoon Dessert Spice Blend (see separate recipe) 1/4 teaspoon ground ginger 1 cup water 1 pinch salt 1/2 cup raisins 2 cups cooked oat groats -- or quinoa, OR other whole grains of your choice 2 kiwi fruit -- peeled and sliced Bring 1/2 cup of the pineapple juice, the oats, rum, spice blend, ginger, water and salt to a boil in a small saucepan. Reduce heat and simmer 5 minutes, stirring frequently, until thick and smooth. Stir in the pineapple, raisins and cooked oat groats and simmer, stirring occasionally, 5 to 10 minutes. Cool slightly or chill before serving. Garnish with the kiwi slices and serve. Yield: 6 to 8 servings, calories: 158, fat: 1g, fiber: 3g.
