Guest guest Posted August 18, 1999 Report Share Posted August 18, 1999 xc: cafe * Exported from MasterCook * Irish Soda Bread Recipe By :Irish Heather, BC Serving Size : 12 Preparation Time :0:00 Categories : Breads New Import Traditional Loaf Amount Measure Ingredient -- Preparation Method -------- ------------ -------------------------------- 1 1/3 cups Nine-grain cereal 1 cup whole-wheat cake flour or white all-purpose flour 1/2 cup whole-wheat flour 1/2 cup bran 1 teaspoon baking soda 1/2 teaspoon salt 1 1/2 tablespoons molasses 1 egg -- beaten 2 tablespoons vegetable oil 1 1/2 cups buttermilk Pre-heat oven to 450 degrees F. Grind the cereal in a food processor so it has a finer texture, but leaves some chunks of seeds and grains intact. In a large bowl, add the ground cereal together with the flours, bran, baking soda and salt. Mix well. In another bowl, combine the molasses, egg, vegetable oil and buttermilk. Make a well in the dry ingredients and pour in the wet mixture. Gradually pull in the dry mixture from the sides and stir, until all ingredients are just moist. The dough will be fairly soft. Spoon evenly into a standard loaf pan which you have greased. Place in oven at 450 for the first ten minutes, then lower the heat to 375 and bake for another 35 to 40 minutes. Use a cake tester to see if the bread has baked through, or remove from the loaf pan and see if you get a hollow sound when tapping on the bottom of the loaf.
