Far from low fat and definitely has lots of dairy products. * Exported from MasterCook * CHOCOLATE BREAD PUDDING WITH HAZELNUTS Recipe By : The Wolfgang Puck Cookbook: Recipes From Spago, Chinois, an Serving Size : 12 Preparation Time :0:00 Categories : Desserts Bread Chocolate Nuts Amount Measure Ingredient -- Preparation Method -------- ------------ -------------------------------- 8 slices fresh challah or brioche 2 3/4 cups heavy cream 6 ounces bittersweet chocolate -- cut into small -- pieces 11 tablespoons unsalted butter -- at room temperature 5 eggs -- separated 3/4 cup ground hazelnuts -- toasted and skinned 1 cup almonds 1 cup sugar Frangelico -- to taste 1. Preheat the oven to 350 degrees. Butter 12 1/2-cup molds. 2. Cut the bread into cubes, place it in a mixing bowl, then combine with 3/4 cup of the cream. Let stand about 30 minutes, or until the cream has been absorbed. 3. Melt the chocolate in a mixing bowl set over a bain-marie. When the chocolate is smooth, remove the bowl from the bain marie. 4. Cream the butter in a large mixing bowl, then add the egg yolks, hazelnuts, 3/4 cup of the sugar, the bread and melted chocolate. Mix well. (The mixture should be free of large lumps). 5. Whip the egg whites to soft peaks, then gradually whip in the remaining 1/4 cup sugar and continue to whip to stiff, shiny peaks. Stir 1/4 of the whites into the chocolate mixture, then gently fold in the remaining egg whites. 6. Divide the pudding mixture among the molds and place the molds in a bain marie. Cover loosely with buttered foil, buttered side down. Bake for 45 minutes, or until the puddings are set. 7. Whip the remaining 2 cups cream until it mounds softly on itself, as for creme chantilly, then perfume it with Frangelico to taste.
