Curried Tofu Mayonnaise

8 ounces soft tofu -- (do not use firm)

2 tablespoons apple cider vinegar

1 teaspoon Dijon mustard

1 teaspoon lemon juice

1 1/2 teaspoons curry powder

Salt -- pepper

 

Makes about 1 cup.

 

Another option is egg-free mayonnaise made with silken (soft) tofu. Even

if you're ambivalent about tofu, this recipe will win you over. It's much

lower in fat than traditional mayonnaise, has no cholesterol and tastes great.

 

Puree tofu, vinegar, mustard, lemon juice and curry powder in blender or

food processor until smooth and thick. Season with salt and pepper to

taste. Makes approximately 1 cup.

Garlic-Flavored Cooked Mayonnaise

1 egg yolk -- at room temperature

1 teaspoon white wine vinegar

1 tablespoon water

1/3 cup olive or safflower oil -- up to 1/2

2 garlic cloves -- finely minced

up to 3

1 dash cayenne pepper

 

Makes about 1/2 cup.

 

My version of McGee's cooked mayonnaise is liberally flavored with garlic,

which makes it delicious as a sandwich spread or to top crusty French

bread. McGee rightly advises having two clean, dry whisks on hand before

beginning.

 

Place egg yolk in small glass bowl (no larger than 2-cup volume), and whisk

until frothy. Whisk in vinegar, then water. Cover bowl with plate and

microwave on high (100 percent power) 20 seconds.

 

Remove from microwave. Quickly beat egg mixture with clean whisk until

smooth. Cover bowl and return to microwave. Microwave on high (100

percent power) 10 to 15 seconds. Beat again with clean whisk. Cover bowl

and let stand 1 minute.

 

Place bowl in shallow pan of cold water and stir until lukewarm. Slowly

begin to whisk in oil, 1 teaspoon at first, then in larger amounts after

mayonnaise begins to thicken. Add garlic and cayenne. Refrigerate in

covered container overnight to thicken.

1 head garlic

1 cup low-fat or homemade cooked mayonnaise

OR tofu mayonnaise

2 green onions -- finely chopped

 

Makes 1 cup.

 

Once you have your homemade mayonnaise of preference, make this creamy dip.

It's great alongside crudites or sesame bread sticks. Thinned with olive

oil, it also makes a delicious creamy salad dressing. Either the

Garlic-Flavored Cooked Mayonnaise or the Curried Tofu Mayonnaise can be

used; if you purchase mayonnaise for this recipe, choose a low-fat version.

 

Place garlic on baking sheet coated with nonstick vegetable spray. Bake at

350 degrees 1 hour until very soft. Let cool. Press garlic from cloves

into bowl and mash with fork. Whisk in mayonnaise and onions. Makes 1 cup.
