2 pints fresh blackberries or boysenberries

2 large ripe peaches -- pitted and sliced

1/4 cup sugar

1/2 teaspoon vanilla extract

4 cups frozen low-fat vanilla yogurt

 

Serves 4.

 

Serve this berry mixture over vanilla frozen yogurt.

 

Preheat grill. Place berries and peaches in center of large sheet of

heavy-duty foil. Sprinkle with sugar and vanilla extract. Seal packet

tightly. Place on grill. Grill 5 to 10 minutes, or until fruit is tender.

 

Spoon yogurt into 4 bowls, then top with berry mixture.

8 large plums -- halved and pitted

2 tablespoons honey -- or to taste

up to 3

1/4 cup fresh orange juice

1 tablespoon chopped fresh mint

1 teaspoon grated orange peel

 

Serves 6 to 8.

 

Plums release a lovely crimson juice as they heat, so be sure to spoon the

cooking liquid over the fruit when you serve it.

 

Preheat grill. Place plums in center of large sheet of heavy-duty foil.

 

Sprinkle fruit with honey, orange juice, mint and orange peel. Seal packet

tightly. Place on grill. Grill 5 to 10 minutes, or until fruit is tender.

4 ripe peaches -- pitted and sliced

2 ripe Bosc pears -- cored and sliced

1 tablespoon apple juice

1 tablespoon pineapple juice

1 teaspoon brown sugar

1/2 teaspoon ground cinnamon

 

Serves 4.

 

This dessert combines summer and early fall fruits.

 

Preheat grill. Arrange peaches and pears in center of large sheet of

heavy-duty foil. Sprinkle with juices, sugar and cinnamon. Seal packet

tightly. Place on grill. Grill 5 to 10 minutes, or until fruit is tender.
