I used the yellow miso which is milder, I think, than the red, and after 2 days on the counter, after I wiped all the miso off, the tofu was still a little moist, and did taste pretty good, almost like cheese. It did absorb the salty flavor. I pur it in the blender with some herbs and a little water to make it smooth and used it as a pasta sauce. It was pretty good. It didn't tast *exactly* like alfredo sauce, but my non-suspecting family members did eat it without knowing it was really tofu and everyone liked it. I definately would try it again, this time leaving it on the counter for the whole 3 days. Also, suprisingly, there was no unpleasant odor. I don't know the name of the show, it was a pbs station, but I do think it was a veg. show, because she also made a tempeh dish.
