Tofu Walnut Pound Cake

Amount Measure Ingredient -- Preparation Method

1/2 cup soft margarine

2/3 cup brown sugar

2/3 pound Sunrise dessert/soft tofu (300g)

1 teaspoon vanilla or maple extract

2 cups flour

2 teaspoons baking powder

1 cup walnuts -- toasted and chopped

 

Preheat oven to 350F and grease a loaf pan. Beat margarine and sugar together

until fluffy. Add tofu and vanilla and beat until smooth. Sift together flour

and baking powder. Add tofu mixture and gently mix until blended. Fold in

toasted walnuts and pour into loaf pan. Bake for 45-60 minutes or until a

toothpick inserted into the centre of the cake comes out clean. Allow to cool

before slicing.
