Cajun Kabobs

Olive oil spray

4 teaspoons olive oil

4 teaspoons paprika

1/2 teaspoon cayenne pepper

1 teaspoon dried oregano

1 teaspoon dried thyme

1 teaspoon salt

1/2 teaspoon freshly ground black pepper

2 small eggplants -- (1 pound)

2 medium yellow squash -- (12 ounces)

1 pound mushrooms

8 skewers

 

Preheat broiler. Line a baking tray with aluminum foil and spray with

olive oil spray. Place on oven rack about 5 inches from heat. Mix olive

oil, paprika, cayenne, oregano, thyme salt, and black pepper together in a

small bowl. Wash eggplant and squash and cut into 2-inch pieces. Wash

mushrooms and leave whole or cut in half if large. Toss vegetables in

spice mixture. Place vegetables on skewers, alternating vegetables for

variety. Remove baking tray from oven and place skewers on foil. Return

to oven and broil 4 minutes. Turn and broil 4 minutes more. Remove and

serve.

Rice Vegetables

 

Amount Measure Ingredient -- Preparation Method

4 teaspoons olive oil

2 medium yellow onions -- sliced (4 cups)

6 medium clove garlic -- crushed

1 cup uncooked long-grain white rice

2 cups vegetable broth

2 cups canned crushed tomatoes

2 cups canned red kidney beans

Several drops hot pepper sauce

2 tablespoons Worcestershire sauce

Salt and freshly ground black pepper -- to taste

 

Heat olive oil in a medium-sized nonstick frying pan on high heat. Add

onion and garlic and saute 1 minute. Add rice and saute 1 minute more.

Add broth and tomatoes. Bring to a boil, cover, lower heat to medium-high,

and simmer 15 minutes. Meanwhile, drain and rinse beans. Add to rice with

hot pepper sauce and Worcestershire sauce. Simmer several minutes. Taste

and add more pepper sauce or Worcestershire as desired. Add salt and

pepper to taste. Serve on individual plates with kabobs.
