Line a baking tray with aluminum foil and spray with olive oil spray. Place on oven rack about 5 inches from heat. Mix olive oil, paprika, cayenne, oregano, thyme salt, and black pepper together in a small bowl. Wash eggplant and squash and cut into 2-inch pieces. Wash mushrooms and leave whole or cut in half if large. Toss vegetables in spice mixture. Place vegetables on skewers, alternating vegetables for variety. Remove baking tray from oven and place skewers on foil. Return to oven and broil 4 minutes. Turn and broil 4 minutes more. Remove and serve. Add onion and garlic and saute 1 minute. Add rice and saute 1 minute more. Add broth and tomatoes. Bring to a boil, cover, lower heat to medium-high, and simmer 15 minutes. Meanwhile, drain and rinse beans. Add to rice with hot pepper sauce and Worcestershire sauce. Simmer several minutes. Taste and add more pepper sauce or Worcestershire as desired.
