Guest guest Posted August 25, 1999 Report Share Posted August 25, 1999 * Exported from MasterCook * TOFU OR TEMPEH MARINADE Recipe By : The High Road to Health Serving Size : 4 Preparation Time :0:00 Categories : Marinade Tofu Tempeh Amount Measure Ingredient -- Preparation Method -------- ------------ -------------------------------- 1 teaspoon olive oil, cold-pressed 1 small onion -- finely chopped 6 mushrooms, one week old -- thinly sliced OR 3 shitake mushrooms, dried, stems included -- broken 3/4 cup water 1/4 cup apple juice 1 teaspoon oregano 1/4 teaspoon basil 1/4 teaspoon tarragon 1 tablespoon vinegar 1/2 cup red wine 1/3 cup soy sauce, natural dash nutmeg 1/8 teaspoon pepper 1/2 teaspoon salt If using shitake mushrooms, soak in 1/4 cup water for 30 minutes. Heat the oil in a saucepan. Add the onion and cook until golden. Add the garlic and cook for one minute more. Add all the other ingredients and simmer, covered, for 30 minutes. Include the soaking water if shitake mushrooms are used. Strain the marinade through a very fine sieve or a double thickness of cheesecloth. - - - - - - - - - - - - - - - - - - NOTES : You can use this marinade for tofu or tempeh and then use the marinated tofu or tempeh in all sorts of dishes.
