Deanne ============================================== * Exported from MasterCook * " I Used to Love a Fried Egg " Sandwich Recipe By : The American Vegetarian Cookbook by Marilyn Diamond Serving Size : 1 Preparation Time :0:00 Categories : Lunch Sandwiches Tofu American Amount Measure Ingredient -- Preparation Method -------- ------------ -------------------------------- 2 1/4 " slices of firm tofu 1 scant tablespoon nutritional yeast or mustard salt (optional) fresh pepper (optional) 1 teaspoon olive oil 2 slices whole grain bread dairy-free mayonnaise of Almonnaise ketchup mustard alfalfa sprouts tomato -- thinly sliced 1. Dip the tofu slices in the nutritional yeast to coat, or brush lightly with mustard. Season to taste with salt & pepper. 2. Heat oil in a skillet. Ad tofu slices and sauté over medium-high heat for three minutes on each side, turning once. 3. Assemble sandwich using bread, mayonnaise or other spread, tofu, sprouts or lettuce, and tomato. - - - - - - - - - - - - - - - - - - NOTES : I usually take about equal amounts of nutritional yeast and corn flour and maybe a little corn meal and/or whole wheat pastry flour and mix it together with a bit of salt & pepper, paprika, and garlic powder. I coat the tofu slices on both sides, then brown in a lightly oiled pan. These make great sandwiches. I wouldn't say they are like " fried eggs " but we love them and this is very easy to make at the last minute, as it doesn't require much preparation.
