" Instead of honey, you can use pure maple syrup or liquid Fruit Source. I have used both with no noticeable change in flavor or quality. It's just that the original recipes say " honey, " so I left that. I have made the carob pie using carob, but also with real cocoa powder at Thanksgiving or other times to share with non-veggies. I served this to some of my husband's Coast Guard buddies this last Thanksgiving and they didn't even ask if it was " vegetarian " or anything. I know they liked it as they ate two slices! Of course, they put Cool Whip on top, but hey...at least they didn't run screaming, " OH, did you put TOFU in this? " LOL Anyway, I save this recipe for very special occasions, but it's a family favorite for veggies and non-veggies alike. :-) I used to have a little thing that made pie shells for individual servings. I used to make those with the carob pudding and everyone loved them. They were pretty and delicious. For the apple pies, I usually look at both recipes and make a sort of combination of the two. Is there anyone else that does that? I often take out 3 - 4 similar recipes and use what I like from each to make something... Deanne ======================================== * Exported from MasterCook * CAROB PUDDING OR PIE Recipe By : The Real Food Cookbook Serving Size : 4 Preparation Time :0:00 Categories : Desserts Pies Pudding Carob Chocolate Thanksgiving Amount Measure Ingredient -- Preparation Method -------- ------------ -------------------------------- 1 cup cashews, raw 1/3 cup carob powder 3/4 cup honey, dried dates, or maple syrup 1 teaspoon vanilla extract 1/2 teaspoon salt 5 tablespoons corn starch (or 3/4 cup rice flour) 4 cups water Blend 1 cup cashews with one cup water for 2 or 3 minutes. Add one more cup water and blend a few minutes more. Add all the rest of the ingredients except the rest of the water, with the blender running. Blend until well mixed. Pour the mixture into a large sauce pan. Add two more cups of water. Cook over medium heat, stirring constantly, until pudding is thickened. Pour into a prebaked pie shell or into serving dishes and refrigerate. Serve chilled with tofu cream or cashew cream. If you have a Vitamix, boil the four cups of water and blend until thick. I also sometimes use cocoa powder for chocolate pudding. I have always used corn starch for this pudding. This makes enough to fill a large store-bought graham-cracker crust, if you don't want to make your own and don't mind the hydrogenated oils or whatever else is in those. :-) I have done that for special occasions and when in a hurry to have something to take to a dinner or something. =================================================== * Exported from MasterCook * APPLE PIE FILLING Recipe By : McDougall Cookbook, Volume 2 Serving Size : 1 Preparation Time :0:00 Categories : American Desserts Fruit Pies Pastries Thanksgiving Amount Measure Ingredient -- Preparation Method -------- ------------ -------------------------------- 6 cups apples -- peeled and sliced 1 tablespoon lemon juice 1/4 cup honey (maple syrup) 2 tablespoons whole wheat pastry flour 1/2 teaspoon cinnamon 1/4 teaspoon nutmeg Combine the apples with the lemon juice. Mix in the honey and toss gently until coated. Mix flour, cinnamon, and nutmeg. Add to apples and toss again to mix. Place into an unbaked pie crust. Sprinkle with a few raisins or grapenuts, if desired. Bake at 375 degrees for 30 minutes. Add the rest of the ingredients, except the flour. Add the flour and toss gently, then put in the pie crust.
