Guest guest Posted August 28, 1999 Report Share Posted August 28, 1999 * Exported from MasterCook * Spinach Radiatore Recipe By : Serving Size : 4 Preparation Time :0:00 Categories : Pasta Quick & Easy Amount Measure Ingredient -- Preparation Method -------- ------------ -------------------------------- 4 cups radiatore pasta [3/4lb] 3 tablespoons olive oil 1 onion -- chopped 2 garlic cloves -- minced 1 teaspoon dried thyme 1 teaspoon dried oregano 10 ounces fresh spinach -- chopped 1/4 cup vegetable stock 1 teaspoon lemon juice 1/2 teaspoon salt 1/2 teaspoon pepper 1/2 cup light cottage cheese In large pot of boiling salted water, cook pasta for 8-10 minutes or until tender but firm. Drain well and return to pot. Meanwhile, in large skillet, heat 2 tb of the oil over medium heat; cook onion, garlic, thyme and oregano, stirring occasionally, for about 5 minutes or until onions are softened. Add to pasta along with remaining oil, spinach, stock, lemon juice, salt and pepper; toss to coat well. Cook over low heat for about 4 minutes or until spinach is wilted. Stir in cottage cheese. Per serving: about 460 calories, 17g protein, 12 g fat, 70 g carbohydrate, high source fibre, excellent source iron.
