At my house we would have our bowl of fresh fruit too. It looks like a quick dinner. Black Bean Chili Mexican White Rice * Exported from MasterCook * Black Bean Chili Recipe By : Vegetarian Dinner in Minutes, by Linda Gassenheimer, p. 95 Serving Size : 4 Preparation Time :0:00 Categories : Beans And Legumes Soups And Stews Vegetables Amount Measure Ingredient -- Preparation Method -------- ------------ -------------------------------- 2 teaspoons olive oil 1 medium red onion -- sliced (2 cups) 4 medium clove garlic -- crushed 1 medium red bell pepper sliced -- (1 cup) 32 ounces canned black beans drained and rinsed -- (3 cups) (Two 16-ounce cans) 2 ripe medium tomatoes cut into 2-inch pieces -- (2 cups) 2 cups frozen or drained canned corn 3 tablespoons chili powder 2 teaspoons ground cumin 2 tablespoons tomato paste 2 cups vegetable broth 2 cups broccoli forets (cut in half if large) Salt and freshly ground black pepper -- to taste 1 loaf crusty sourdough bread 1/4 cup shredded Monterey jack cheese -- for garnish 4 scallions -- sliced (I cup) for garnish Preheat oven to 350 degrees F. Heat oil in a large nonstick frying pan on medium-high heat. Add onion and saute 3 minutes. Add garlic and red bell pepper and saute 3 minutes. Add black beans, tomatoes, corn, chili powder, and cumin. In a bowl, mix tomato paste in to broth, then stir into chili. Simmer, covered, 10 minutes. Add broccoli and simmer, covered, 5 minutes more. Add salt and pepper and taste for seasoning. Add more chili powder or cumin as desired. Warm bread in oven 5 minutes. Slice and serve with chili. Serve chili over rice and pass cheese and scallions to sprinkle on top. Add onion and garlic and saute 2 minutes Do not brown. Add rice and saute 30 seconds. Add broth, jalapeno peppers, and oil. Cover and simmer 15 minutes. Add salt and pepper to taste.
