Guest guest Posted September 5, 1999 Report Share Posted September 5, 1999 Don't get me wrong -- I like this cookbook, and the recipes in it look yummy, but looking it over to get recipes ready to post here, reminded me of why I've never used it much! Many of the recipes are very lengthy, lots of ingredients, and/or have long instructions -- they look like they'd take too much time to make. Well, perhaps for special occasions or weekend meals! Here's the first of the ones I'll be posting from this cookbook this week (this ones pretty basic & simple): * Exported from MasterCook * Lemon Raspberry Muffins Recipe By :Beyond the Moon Cookbook, Ginny Callan Serving Size : 12 Preparation Time :0:00 Categories : Beyond the Moon Amount Measure Ingredient -- Preparation Method -------- ------------ -------------------------------- 1 1/4 cups whole wheat pastry flour 1 1/4 cups unbleached white flour 1/2 teaspoon salt 1 tablespoon baking powder 2 large eggs 1/2 cup honey 1/2 cup canola oil 1/2 cup fresh lemon juice 1/2 cup milk 1 teaspoon vanilla extract 1 1/2 cups raspberries -- (fresh or frozen) Preheat oven to 400 ° F. Grease a 12-cup muffin tin. Stir together the flours, salt, and baking powder in a medium-size bowl. In another bowl, beat the eggs with the honey, lemon juice, milk, and vanilla. Pour the wet ingredients into the dry, stirring just until combined. Fold in the raspberries. Spoon the batter into prepared muffin cups. Bake for 18-20 minutes, until golden.
