Karen said that it would be alright if I included recipes from Horn of

the Moon Cookbook in our discussion of Beyond the Moon because Beyond

the Moon is the sequel. Here are 3 breakfast recipes from Horn of the

Moon by Ginny Callan:

" Tex-Mex " Home Fries

Amount Measure Ingredient -- Preparation Method

1 qt water

4 cups potatoes -- unpeeled & cubed

1/2 tsp salt

dash black pepper

1/4 cup cilantro -- chopped

2 tbsp fresh dill weed -- chopped

3/4 cup green pepper -- diced

1 med ripe red tomato -- coarsely chopped

1 tbsp sunflower oil

2 lg cloves garlic -- minced

1 tbsp Jalapeno pepper -- minced

1 1/2 cups onion -- chopped

1 cup sharp cheddar cheese -- grated

1/2 cup sour cream

1/2 cup salsa

 

Bring water to a boil in 3 qt saucepan. Add potatoes and cover. Cook

over medium heat for 10-15 minutes until potatoes are tender and a fork

goes into them easily. Drain.

 

In a medium-sized bowl, mix potatoes with salt, pepper, cilantro, dill,

green pepper and tomato. Stir well. Preheat a 10 " cast-iron skillet; add

oil. Saute garlic, hot pepper and onion over medium heat. When onion

begins to brown, add potato mixture. Continue to cook over low heat

until potatoes are nicely browned. Sprinkle grated cheese over potatoes.

Cover and cook for 5 minutes. Turn off heat and serve with sour cream

and salsa on the side.

Egg McMoon

Amount Measure Ingredient -- Preparation Method

3 tbsp butter

2 cups mushrooms -- sliced

1 tsp dried dill weed

2 tbsp unbleached white flour

1 1/4 cups milk

1 cup sharp cheddar cheese -- grated

pinch salt

dash black pepper

8 eggs

4 english muffins -- split in half

 

Melt 2 tbsp butter in 2 qt saucepan over medium heat. Add sliced

mushrooms and dill weed. When mushrooms are just tender, add flour and

brown. Slowly add milk; lower heat to a simmer. When all of milk is

added, add cheddar cheese and stir in with a whisk. Add salt and pepper.

Simmer the cheese sauce on very low heat while cooking eggs.

 

Heat a 10 " fry pan over medium heat. Swirl remaining butter over bottom

of pan. Crack 4 eggs into it and fry. Toast 2 split english muffins. Fry

eggs to desired texture (I usually do this over light on the other side

when flipped). Put fried eggs over toasted english muffin halves. Top

with hot cheese sauce. Repeat process with remaining eggs and muffins,

and serve.

Sour Cream Pancakes

Amount Measure Ingredient -- Preparation Method

1 1/4 cups whole wheat flour

3/4 cup unbleached all-purpose flour

1/2 tsp salt

2 tsp baking powder

3/4 tsp baking soda

1 3/4 cups sour cream

1 tbsp honey

2 tbsp butter -- melted

1/2 tsp vanilla extract

1 3/4 cups milk

1 egg yolk

1 egg white -- beaten well

1 tbsp butter (to 2 tbsp)

hot maple syrup

 

Mix dry ingredients together in medium-sized bowl. In a separate bowl,

mix sour cream, honey, melted butter, and vanilla together. Add milk and

egg yolk. Mix again. Pour dry ingredients into wet and stir well. Add

egg white and stir.

 

Preheat a griddle or fry pan over medium-low heat. When pan is hot add 1

tbsp butter, quickly spread over pan, and pour in a 1/2 cup ladle of

pancake batter for each pancake. Cook the pancakes until bubbles appear

on the surface. Flip the pancakes and cook for another 1 to 2 minutes.

Repeat until all batter has been used, adding more butter as needed to

pan. Serve with hot maple syrup.

 

Makes 9 large pancakes.
