Guest guest Posted September 6, 1999 Report Share Posted September 6, 1999 * Exported from MasterCook * Cauliflower-Mushroom-Cheddar Soup Recipe By : Ginny Callan, Beyond the Moon Cookbook Serving Size : 1 Preparation Time :0:00 Categories : Soups, Stews, Chowders Amount Measure Ingredient -- Preparation Method -------- ------------ -------------------------------- 2 tablespoons canola oil 1 cup onion -- chopped ( that's 1 large onion) 5 cloves garlic -- minced (make those large cloves) 1 cup carrots -- diced (that's 2 medium carrots) 1 cup celery -- sliced (that's 2 stalks) 1 teaspoon dried thyme 1 teaspoon dried basil 4 cups mushrooms -- sliced (that's 1 pound) 1/3 cup unbleached white flour 4 cups cauliflower** -- chopped (that's 1 medium head) 1 teaspoon salt 1/2 cup minced fresh parsley OR 1 tablespoon dried parsley 1 1/2 cups extra-sharp cheddar cheese -- grated (that's 6 ounces) 2 teaspoons Worcestershire sauce [** Don't throw out the water after cooking the cauliflower.] Heat the oil in a large skillet over medium heat. Saute the onion, garlic,carrots, celery, thyme, and basil until the vegetables are soft, about 5 minutes. Stir in the mushrooms and cook until tender, 3 to 4 minutes more. Stir the flour into the vegetables and remove skillet from the heat. **Cook the cauliflower in 5 cups of water in a large soup pot until tender, 6 to 8 minutes. [KEEP THE WATER AFTERWARDS.] Stir in the sauteed vegetables [into the water and cauliflower]. Working in batches, puree about one-third of the soup in a food processor or blender, and return it to the pot [until the whole pot of soup has been pureed.] Stir in the salt, parsley, cheese, and Worcestershire. Warm the soup over very low heat for 5 to 10 minutes, stirring occasionally to prevent burning. Ladle into soup bowls and serve. Yes, I drained the water down the drain, duh.
