Blueberry Nut Bread a la Horn of the Moon

Amount Measure Ingredient -- Preparation Method

1 1/4 cups blueberries -- fresh or frozen

1 cup whole wheat pastry flour

1 cup unbleached white flour

1/4 teaspoon salt

1 1/2 teaspoon baking powder

1/2 teaspoon baking soda

1 egg

3/4 cup honey

2 tablespoons butter -- melted

3/4 cup orange juice

2 tablespoons grated orange peel

1 cup chopped walnuts

 

Butter and flour 9 x 5-inch loaf pan. Wash berries and dry well. Preheat

oven to 350 degrees. Mix flour in bowl. Remove 1 teaspoon flour and toss

with berries. Add salt, baking powder, and soda to remaining flour. In a

large bowl with an electric mixer, beat egg and honey, then beat in butter

and orange juice. On low speed, add dry ingredients. Remove mixer. Fold

in orange peel, nuts, and blueberries. Pour batter into loaf pan. Bake 1

hour until toothpick comes out dry. Bread will crack on top, showing off

its berries. Let cool 10 minutes in pan, but no longer, and remove from

pan after loosening the edges with knife. 8 servings
