Carrot Walnut Raisin Muffins Horn of the Moon

Amount Measure Ingredient -- Preparation Method

2 cups whole wheat pastry flour

1/2 cups unbleached white flour

2 teaspoon baking powder

1/4 teaspoon salt

2 eggs -- beaten

1 cup milk

1/3 cup sunflower oil

1/2 cup honey

1 1/4 cups grated carrots

1/2 cup chopped walnuts

1/2 cups raisins

 

Preheat oven to 400 degrees. Combine flours, baking powder, and salt in a

medium-sized bowl. Mix eggs, milk, oil, and honey together. Combine wet

ingredients with dry. Fold in carrots, walnuts, and raisins. Spoon

approximately 1/2 cup mixture for each muffin into oiled muffin tins.

Place immediately in oven. Bake 20 minutes until lightly browned on top.
