Guest guest Posted September 7, 1999 Report Share Posted September 7, 1999 * Exported from MasterCook * Carrot Walnut Raisin Muffins Horn of the Moon Recipe By :Horn of the Moon Cookbook, Ginny Callan Serving Size : 12 Preparation Time :0:00 Categories : Restaurant Sweet Bread Amount Measure Ingredient -- Preparation Method -------- ------------ -------------------------------- 2 cups whole wheat pastry flour 1/2 cups unbleached white flour 2 teaspoon baking powder 1/4 teaspoon salt 2 eggs -- beaten 1 cup milk 1/3 cup sunflower oil 1/2 cup honey 1 1/4 cups grated carrots 1/2 cup chopped walnuts 1/2 cups raisins Preheat oven to 400 degrees. Combine flours, baking powder, and salt in a medium-sized bowl. Mix eggs, milk, oil, and honey together. Combine wet ingredients with dry. Fold in carrots, walnuts, and raisins. Spoon approximately 1/2 cup mixture for each muffin into oiled muffin tins. Place immediately in oven.
