Guest guest Posted September 7, 1999 Report Share Posted September 7, 1999 * Exported from MasterCook * Cranberry Bread a la Horn of the Moon Recipe By :Horn of the Moon Cookbook, Ginny Callan Serving Size : 8 Preparation Time :0:00 Categories : Restaurant Sweet Bread Amount Measure Ingredient -- Preparation Method -------- ------------ -------------------------------- 1 1/2 cups unbleached white flour 1 1/2 cups whole wheat pastry flour 1 teaspoon baking powder 1/2 teaspoon salt 2 eggs 3/4 cup honey 1/4 cup butter -- melted 3/4 cup milk 1/2 cup orange juice 1 1/4 cups chopped raw cranberries 3/4 cup chopped walnuts Mix dry ingredients together. Beat eggs in separate bowl; add honey and melted butter, then milk and orange juice. Mix dry and wet ingredients together. Fold in berries and nuts. Pour into oiled 9 x 5-inch loaf pan. Bake 1 hour at 425 degrees. Cool in pan for at least 10 minutes. Loosen around edges of pan with a knife before removing. 8 servings. The cranberry and orange juice combination gives this bread just the right amount of tartness. The red berries make it festive for the Christmas holidays.
