Guest guest Posted September 8, 1999 Report Share Posted September 8, 1999 * Exported from MasterCook * Pan Fried Dofu with Mushrooms (Tofu) Recipe By : Yin-Fei Lo Serving Size : 6 Preparation Time :0:00 Categories : Tofu Vegetable Dishes Amount Measure Ingredient -- Preparation Method -------- ------------ -------------------------------- 6 small cakes fresh tofu 1/2 pound fresh mushrooms 2 tablespoons peanut oil (or more) -- to fry tofu 1 1/2 tablespoons peanut oil -- mixed with 1/4 teaspoon salt -- to fry mushrooms S A U C E 1 1/2 tablespoons cornstarch 2 tablespoons dark soy sauce 1/4 teaspoon salt -- may be doubled 1 teaspoon sugar 1 cup vegetable stock or cold water G A R N I S H 10 fresh cilantro sprigs Thoroughly dry the tofu with paper towels. Clean mushrooms with paper towels; remove stems and cut each cap into 3 pieces In a large pot bring 3 cups of water to a boil. Add mushrooms, bring water back to a boil. Remove pot from heat, run cold water in, then strain off all water. Drain mushrooms and set aside. Heat in a flat-bottomed frying pan (preferably cast iron) 2 to 3 tablespoons peanut oil. Fry tofu cakes for 5 to 7 minutes, or until light brown. Turn cakes over and repeat. Both sides should be light brown. Place in a serving dish and cut into 1-inch pieces. Heat wok over high heat, add 1½ tablespoons peanut oil mixed with salt. Stir-fry mushrooms for 30 seconds. Stir sauce ingredients and add to wok over low heat. Continue stirring clockwise until sauce thickens and becomes dark brown. Pour sauce and mushrooms over tofu, garnish with sprigs of coriander, and serve immediately. Each serving 376 cals, 25g fat, 56% cff, 1g fiber. Lowfat Alternative: Steam the tofu and served with pan-fried mushrooms.
