Sheryl * Exported from MasterCook * Red Cabbage with Fennel Recipe By : BHG, Sept. 1998 Serving Size : 4 Preparation Time :0:00 Categories : Side Dishes Vegetables Vegetarian Amount Measure Ingredient -- Preparation Method -------- ------------ -------------------------------- 2 lb fennel 1/2 cup apple juice 1/4 cup cider vinegar 1 tsp pareve " chicken " bouillon granules -- * see note 3 cloves garlic -- minced 1 tbsp oil 4 cups shredded red cabbage 2 tbsp brown sugar 1/4 tsp fennel seed -- crushed *these are not necessary at all Cut off and discard upper stalks of fennel. Snip 2 tsp of the leafy fennel tops; set aside along with a few sprigs of the leafy tops. Cutt off a thin slice from the base of the fennel heads; remove wilted outer layers of the stalks. Wash the fennel adn cut into quarters lengthwise. In a small bowl combine the apple juice and vinegar. In a medium saucepan combine the fennel bulbs, 1/2 cup of the apple juice mix, bouillon granules and garlic. Bring to a boil; reduce heat, cover and simmer until the fennel wedges are tender. Meanwhile, in a large skillet or wok, preheat the oil over medium high heat. Add the cabbage and stir fry for 3-5 minutes or until the cabbage is crisp-tender. Combine the remaining 1/4 cup of the apple juice mixture and brown sugar; stir into the cabbage with the fennel seed. Cook and stir 1 minute or until heated through. Transfer the cabbage to a serving platter. Remove the fennel bulbs from the liquid with a slotted spoon. Place on top of the cabbage.
