Carmelized Sweet Potatoes

Amount Measure Ingredient -- Preparation Method

2 large onions -- cut in 3/4 " pieces

4 tsp butter

1 lb sweet potatoes -- peeled and sliced

1/4 cup water

2 tbsp brown sugar

3/4 tsp snipped fresh rosemary -- OR

1/4 tsp dried rosemary

snipped fresh parsley -- optional

 

In a medium skillet cook the onions in hot butter over medium high heat

until nearly tender, stirring frequently. Stir in sweet potatoes and

water. Cover and cook over medium heat until teh sweet potatoes are nearly

tender, stirring occasionally. Uncover; add the brown sugar and rosemary.

Cook, stirring gently, over medium low heat until the onions and sweet

potatoes are glazed. Garnish with snipped fresh rosemary if desired.
