Use your imagination and add/substract the veggies you prefer. Sheryl * Exported from MasterCook * Ratatouille with Penne Recipe By : Gourmet, Sept. 1999 Serving Size : 6 Preparation Time :0:00 Categories : Pasta Vegetarian Amount Measure Ingredient -- Preparation Method -------- ------------ -------------------------------- 1 1/2 lb eggplant -- cut in 1/2 " cubes 4 onions -- chopped 1/2 cup olive oil kosher salt 1 1/2 lb yellow squash -- cut in 1/2 " cubes 2 large red bell peppers -- cut in 1/2 " cubes 8 plum tomatoes, peeled -- seeded and chopped 7 cloves garlic -- minced 1 tsp chopped fresh thyme 1 1/2 lb penne rigate 1/2 cup finely chopped fresh parsley 1/4 cup finely chopped fresh basil grated Parmigiano-Reggiano Preheat oven to 450 degrees. The recipe did not specify this but it is a must with eggplant - liberally salt the eggplant cubes and place in a colander. Put a weight on top and let sit for 30-60 minutes. Rinse and pat dry. STir together the eggplant, onion, 1/4 cup oil and kosher salt in a large roasting pan; roast for 15 minutes, stirring occasionally. Stir in squash, peppers, 2 tbsp oil and more kosher salt; roast until the bell peppers are tender (25 to 30 minutes), stirring occasionally. While the veggies are roasting, simmer the tomatoes, garlic, thyme, remaining 2 tbsp oil and kosher salt in a heavy saucepan, stirring occasionally, until thickened (12-15 minutes). Stir tomatoes into the roasted veggies and season to taste with salt and pepper. Cook the penne until al dente and drain. While the pasta is cooking, stir the parsley and basil into the ratatouille. Toss eht penne with 1/3 of the ratatouille and serve topped with the remainder.
