Chili Non Carne

Amount Measure Ingredient -- Preparation Method

2 tablespoons vegetable oil

1 medium onion -- chopped

1 1/2 teaspoons chilli powder -- (or more to taste)

2 4 1/2 oz packages TVP chunks *OR*

4 vegetable burgers -- crumbled

1 1/2 cups vegetable stock or water -- (3/4 cup if using veg

burgers)

1 16 oz can chopped tomatoes

1 16 oz can red kidney beans

2 Mexican green chiles in brine -- drained and chopped

salt & freshly ground black pepper to

taste

 

Heat the oil in a large saucepan and saut‚ the onion until golden brown.

 

Add the chilli powder and TVP chunks and brown for 5 minutes.

 

Add the vegetable stock and tomatoes, together with their juice. Cover and

simmer for 20 minutes.

 

Add the kidney beans and the chiles if you are using them, and simmer for about

15 minutes, adding a little extra stock or water if necessary.

 

Season to taste and serve hot with rice, mashed potatoes or avocado salad.
