Nasoya is actually my favorite brand of tofu, I always use their

extra firm. I imagine they don't tell you to drain the tofu because

tofu water isn't really tofu, it's just water. I always wonder what I'm

missing when recipes tell me to drain (or well-drain) tofu -- do they

really mean to press it?
