Soak in boiling water and then peel. Cut into bite-sized pieces. Chop the scallions with greens. Heat the oil in a frying pan. Beat in eggs, stirring with a chopstick, and cook into soft scrambled eggs. Place water, soy milk and soup base in a bot and bring to a boil. Add the tomato. When the tomato is cooked, stir in the scrambled eggs. Place in a bowl and sprinkle with the scallions.
