Guest guest Posted September 14, 1999 Report Share Posted September 14, 1999 a recipe for Liz * Exported from MasterCook * Carrot Potage (Soy Milk) Recipe By :Kyoko Honda Serving Size : 4 Preparation Time :0:00 Categories : Soups Soy Milk Amount Measure Ingredient -- Preparation Method -------- ------------ -------------------------------- 2 carrots 1 small onion 3 tablespoons butter 2 tablespoons water 1/2 tablespoon sugar 1 teaspoon salt * * * 4 cups water 2 vegetarian bouillon cubes 2 tablespoons rice * * * 2 cups soy milk pinch salt and pepper * * * 1/2 slice bread -- for croutons oil for frying minced parsley -- for garnish Cut carrot and onion into thin slices. Melt butter in a thick pot and stir fry over medium heat with care not to burn. Stir in 2 tablespoons water, sugar, salt. Lower the heat and cover with lid. Simmer about 5 minutes. Add 4 cups water, bouillon cubes and rice and cook over medium heat. When rice is cooked tender, remove from the heat. When cool, blend in a blender. Return to the pot and add the soy milk and bring to a boil. Season with a pinch of salt and pepper. Cut the bread into 1/4-inch cubes and deep-fry in the oil 320F. Drain. Place serving of soup in a bowl and sprinkled with some croutons and parsley. Serve hot.
