Carrot Potage (Soy Milk)

2 carrots

1 small onion

3 tablespoons butter

2 tablespoons water

1/2 tablespoon sugar

1 teaspoon salt

4 cups water

2 vegetarian bouillon cubes

2 tablespoons rice

2 cups soy milk

pinch salt and pepper

1/2 slice bread -- for croutons

oil for frying

minced parsley -- for garnish

 

Cut carrot and onion into thin slices. Melt butter in a thick pot and stir fry

over medium heat with care not to burn. Stir in 2 tablespoons water, sugar,

salt. Lower the heat and cover with lid. Simmer about 5 minutes.

 

Add 4 cups water, bouillon cubes and rice and cook over medium heat. When rice

is cooked tender, remove from the heat. When cool, blend in a blender.

 

Return to the pot and add the soy milk and bring to a boil. Season with a pinch

of salt and pepper.

 

Cut the bread into 1/4-inch cubes and deep-fry in the oil 320F. Drain.

 

Place serving of soup in a bowl and sprinkled with some croutons and parsley.

Serve hot.
