Rice And Vegetables In Wine Home Cooking with Linda McCartney * Exported from MasterCook * Rice And Vegetables In Wine Recipe By : Home Cooking with Linda McCartney, page 119 Serving Size : 1 Preparation Time :0:00 Categories : Rice Side Dishes Vegetables Amount Measure Ingredient -- Preparation Method -------- ------------ -------------------------------- 2 tablespoons vegetable oil 1 onion -- chopped 1 medium zucchini chopped 1 medium carrot -- chopped 1 stick celery -- chopped 1 cup long grain rice 1 1/4 cups vegetable stock or water 1 cup white wine Heat the oil in a saucepan and saute the onion. Add the rest of the vegetables and stir them over a medium heat until lightly browned. Heat the oil in a deep saucepan and saute the onion. Add the rice to the saute and stir over a medium heat until the rice begins to go clear. Add the vegetable stock and soy sauce and cook, covered, for about 15-20 minutes, or until the liquid has been absorbed.
