If you love mushrooms, like I do, you'll try this too. * Exported from MasterCook * Wild Mushroom Bread Recipe By : Phillips Dried Mushrooms Serving Size : 20 Preparation Time :0:00 Categories : Breads Herbs Mushrooms Amount Measure Ingredient -- Preparation Method -------- ------------ -------------------------------- 1 oz dried morel mushrooms 2 cups milk 2 tbsp olive oil 5 cups bread flour (to 6 cups) 1 pkg dry active yeast 2 tbsp sugar 2 tsp salt 1/2 cup onion -- chopped 1 tbsp fresh rosemary -- chopped OR 1 tsp dried rosemary -- crushed egg -- beaten Reconstitute mushrooms. Coarsely chop. Heat milk and oil to 125°F. In large bowl, combine flour (reserving 1/2 cup), yeast, sugar and salt. Stir in warm milk mixture. Mix until soft dough forms. Knead 10 minutes on lightly floured surface until no longer sticky. Place dough in lightly oiled bowl. Cover; keep in warm place until doubled in size, about 1 hour. Punch dough down. Knead in mushrooms, onions, and rosemary. Divide dough in half for 2 loaves or into quarters for 4 mini-loaves. Shape into loavese. Place into greased pans. Cover; let rise 30 minutes or until dough reaches top of pans. Brush loaves with egg white. Bake in preheated 350°F oven for 40 minutes. Cool in pans 10 minutes. Remove from pans; cool on wire rack. Makes 2 large loaves or 4 mini-loaves.
