Guest guest Posted September 18, 1999 Report Share Posted September 18, 1999 * Exported from MasterCook * Avocado and Dill Soup Recipe By : Linda McCartney's Home Cooking Serving Size : 1 Preparation Time :0:30 Categories : Soups & Stews Amount Measure Ingredient -- Preparation Method -------- ------------ -------------------------------- 2 large ripe avocados 1 cup sour cream 2 tablespoons finely chopped fresh dill 1 1/2 cups cold vegetable stock 1 teaspoon soy sauce salt and freshly ground black pepper -- to taste a little chopped dill or chives -- for garnish Cut the avocados in half, extract the stones, scoop out the flesh and place it in a blender. Add the res of the ingredients and blend for 1-2 minutes until smooth. Chill for 20 minutes, garnish and serve. 30 minutes to make Good source of vitamin A, B group vitamins, potassium This is a cold soup, perfect for dinner parties or summer picnics.
