Guest guest Posted September 18, 1999 Report Share Posted September 18, 1999 * Exported from MasterCook * Couscous with Vegetables Recipe By : Serving Size : 6 Preparation Time :0:00 Categories : Vegan Amount Measure Ingredient -- Preparation Method -------- ------------ -------------------------------- 1/2 package (of 10 oz. pkg.) frozen peas -- thawed and drained 1/2 cup onion -- minced 1/2 cup fresh mushrooms -- thinly sliced 1/2 teaspoon garlic -- crushed 2 tablespoons dry white wine 1/2 teaspoon dried basil 1 teaspoon salt 1/4 teaspoon freshly ground black pepper 2 tablespoons fresh parsley -- minced 1/2 cup uncooked couscous 1/2 cup water 1 tablespoon margarine In a microwave safe casserole, combine peas, onions, mushrooms, garlic, wine, basil, salt and pepper. Stir. Cover and cook 2 minutes on high. Remove from microwave; add parsley, couscous, water, and margarine. Stir to mix in couscous thoroughly. Cover and cook 1 to 3 additional minutes on high or until liquid boils. Let stand 3 to 4 minutes.
