Microwave Risotto

Amount Measure Ingredient -- Preparation Method

2 tablespoons butter or margarine

2 tablespoons olive oil

1 cup uncooked Arborio rice

1/2 cup onion -- chopped

3 cups vegetable or imitation chicken broth

8 ounces sliced fresh mushrooms

1 cup frozen English peas

1/2 cup freshly grated Parmesan cheese

1/4 teaspoon freshly ground pepper

 

Microwave butter or margarine and oil on high for 2 minutes. Stir in rice

and onion. Microwave on high 4 minutes, stirring after 3 minutes. Stir in

broth. Microwave on high for 10 minutes, stirring at 3 minute intervals. Stir

in mushrooms and microwave on high for 8 minutes, stirring at 3 minute

intervals. Stir in peas and microwave on high for 2 minutes. Cover and let sit

for 5 minutes. Sprinkle with Parmesan and pepper; serve immediately.
