Here's another one for Monday, but on Tuesday. Another one that is on my

" to try " list.

Ricotta Fettuccine Alfredo with Broccoli

Amount Measure Ingredient -- Preparation Method

2 c broccoli florets -- small

2 tbsps butter or margarine

2 tbsps all-purpose flour

2 c skim milk

2/3 c part-skim ricotta cheese

1/2 c grated Parmesan cheese

1/4 tsp salt

1/4 tsp coarsely ground pepper

8 ozs fettuccine -- cooked

2 tbsps minced fresh parsley

 

Steam broccoli, covered, 3 minutes or until crisp-tender.

 

Melt the butter in a sautépan over medium heat. Add flour, and cook for 1

minute, stirring constantly. Gradually add milk, stirring with a whisk

until blended. Cook 15 minutes or until thick, stirring constantly. Stir in

cheeses, salt, and pepper, and cook 5 minutes or until cheese melts. Stir

in broccoli and pasta. Sprinkle with parsley.

 

Yield: 4 servings (serving size: 1 1/2 cups).
