Guest guest Posted September 25, 1999 Report Share Posted September 25, 1999 * Exported from MasterCook * Creole Vinaigrette (USA) Recipe By :Linda McCartney Serving Size : 0 Preparation Time :0:00 Categories : Salads and Dressings Amount Measure Ingredient -- Preparation Method -------- ------------ -------------------------------- 1/4 cup red wine vinegar 1 tablespoon wholegrain mustard 1 garlic clove -- crushed 1 teaspoon Cajun Spice Mix -- or more 1/2 teaspoon cayenne pepper tabasco sauce -- to taste salt and pepper 3/4 cup olive oil In a large measuring jug, whisk together red wine vinegar, mustard, garlic, 1-2 tsp Cajun Spice Mix (your own or see recipe), cayenne pepper, dash of Tabasco sauce and seasoning. Gradually whisk in olive oil until the mixture thickens. It will keep in a covered jar in the fridge for up to 10 days.
