Creole Vinaigrette (USA)

Amount Measure Ingredient -- Preparation Method

1/4 cup red wine vinegar

1 tablespoon wholegrain mustard

1 garlic clove -- crushed

1 teaspoon Cajun Spice Mix -- or more

1/2 teaspoon cayenne pepper

tabasco sauce -- to taste

salt and pepper

3/4 cup olive oil

 

In a large measuring jug, whisk together red wine vinegar, mustard, garlic, 1-2

tsp Cajun Spice Mix (your own or see recipe), cayenne pepper, dash of Tabasco

sauce and seasoning.

Gradually whisk in olive oil until the mixture thickens. It will keep in a

covered jar in the fridge for up to 10 days.
