Garlic Dipping Sauce (China)

Amount Measure Ingredient -- Preparation Method

2/3 cup water

2/3 cup white vinegar

3 garlic cloves -- crushed

1 teaspoon chile pepper powder

1 tablespoon chopped fresh coriander (cilantro)

 

Combine sugar, water, vinegar and garlic in a small pan. Bring the mixture to

the boil and stir until the sugar has dissolved. Then turn the heat down and

simmer until the sauce thickens slightly (about 10-15 minutes).

Remove the pan from the heat and stir in chile powder and cilantro. Allow the

mixture to cool a little, then pour it into a bowl and chill until you are ready

to serve.
