Guest guest Posted September 25, 1999 Report Share Posted September 25, 1999 * Exported from MasterCook * Crispy Vegetable Wontons (China) Recipe By :Linda McCartney Serving Size : 4 Preparation Time :0:00 Categories : Appetizers Amount Measure Ingredient -- Preparation Method -------- ------------ -------------------------------- FOR THE FILLING 1 tablespoon peanut (groundnut) oil 1/3 cup finely grated carrots 1/2 cup finely grated cabbage 1/4 cup bean sprouts 2 large garlic cloves -- finely chopped 1 tablespoon dark soy sauce 3 tablespoons mashed tofu or lowfat vegetarian soft cheese 1 pinch unrefined sugar 1 teaspoon sesame oil salt and pepper FOR THE WRAPPERS 20 wonton skins OR 2/3 pound filo pastry vegetable oil -- for deep-frying Sweet and Sour Chili Dipping Sauce -- see recipe OR Garlic Dipping Sauce -- see recipe Heat a wok or large frying pan and add the oil. When it is hot, stir-fry the carrots, cabbage, beansprouts and garlic for 1 minute. Set the vegetables aside and allow them to cool. After they have cooled, combine the vegetables with the rest of the filling ingredients. Put a generous teaspoonful of the filling in the center of each wonton skin. (If you are using filo pastry, cut a double thickness into 10cms (4-in) squares, and brush lightly with water before filling them.) Pull up two opposite corners, dampen the edges with a little water and pinch them together. Bring up the two other corners, pinch them together with the first two, and seal with a little water, so that they look like small bundles. Pour 2 to 3 inches of oil into a medium saucepan and place on a medium to high heat. The oil is ready when a cube of bread browns immediately. Deep-fry the wontons in batches until they are golden and crisp. Drain them on kitchen paper. Serve at once, with a dipping sauce. They are sold ready-made in Asian shops and can be stored in the refrigerator for up to five days or frozen successfully. (If you do freeze them, make sure that they are thoroughly defrosted before use.) Filo pastry makes a good alternative. Nutr.
