Sweet And Sour Chile Pepper Dipping Sauce (China)

Amount Measure Ingredient -- Preparation Method

6 tablespoons white wine or rice vinegar

4 tablespoons brown sugar

1 tablespoon soy sauce

1 small red chile peper -- seeded and chopped very finely

1/2 teaspoon grated fresh ginger

 

In a small saucepan, boil white wine or rice vinegar with brown sugar until

slightly thickened (about 5 minutes). Add dark soy sauce and red chile pepper.

Stir in grated fresh ginger.
