Spicy Refried Bean Tacos

Amount Measure Ingredient -- Preparation Method

1 cup canned refried beans -- (make sure they're vegetarian)

2 tablespoons bottled taco sauce or salsa -- (to 3 tbsp)

4 medium tomatoes -- peeled & chopped

4 green onions -- thinly sliced

1 teaspoon hot chili sauce -- (to 2 tsp)

sea salt

4 taco shells

shredded mild cheese -- (optional)

shredded lettuce

sliced avocado -- (optional)

sour cream -- (optional)

 

Heat the refried beans with the taco sauce. Add the chopped tomatoes and mash

thoroughly. Add the green onions and cook gently for 4 to 5 minutes, stirring

frequently. Season to taste with chili sauce and a little salt if desired.

Half fill the warm taco shells with the mixture and top with shredded cheese and

shredded lettuce (you can put the lettuce in the bottom of the shell if you

prefer). Garnish with a slice or two of avocado and a dollop of sour cream.
