(I prefer to eat mine and am disappointed every time I decide to try a smoothie.) All the recipes are from the vegetariantimes web site in August which featured smoothies. Depending on availability, you can use fresh or dried fruit, or you can combine fresh and dried if you'd like. For fresh apricots: Put apricots and papaya in food processor or blender and process until smooth. Add a little water if needed for consistency. For dried apricots: In medium saucepan, combine dried apricots with 1/2 cup water. Cover and simmer until apricots are plumped and softened, about 5 minutes. Transfer to food processor or blender and add another 1/2 cup water and papaya. Process until smooth. Pour or spoon mixture into serving glasses and garnish with mint leaves. Makes 2 servings. They were created for the authors children but work great for adults too! The recipes cater to those who are vegan (the alternative of using Soy milk is always available). I have heard a second edition is due out sometime this year. Here is one from the book using Dates: Almond Lassi 1 cup almond milk 2 dates (chopped) 1/2 tsp ground cardamon 1/4 tsp grd black pepper blend all ingredients in blender for a minute or so. Some of the recipes use ice cubes or frozen fruit....I suppose you can do what you want in the end! Have fun! Guest guest Posted July 17, 2001 Report Share Posted July 17, 2001 Here are some of my favorite smoothie drinks using silken tofu~~~~ Strawberry 8 oz silken tofu 10 fresh strawberries 1/4 tea vanilla 2 pkg sweetner or sugar 2-3 ice cubes Banana 8 oz silken tofu 2 ripe bananas 2-3 ice cubes Choco-Banana see banana recipe add: 2t cocoa powder Nectarine or peach shake 8 oz silken tofu 2 nectarines or peaches 2 pkg sweetner or sugar 2-3 ice cubes Raspberry Watermelon 8 oz silken tofu 1 C raspberries 1 C watermelon 2 pkg sweetner or sugar During the summertime I use the fresh fruit, because it tastes to wonderful and is plentiful. Mango-Peach Smoothie 1/2 fresh mango, chopped up 1 C frozen peach slices 1/2 banana 1/4 C orange juice 1/2 C mango or peach frozen sorbet 1/3 C silken tofu (optional) Put frozen peaches in blender and chop up. Apple Pie Shake Ingredients: 1/2 cup apple juice 1/2 tsp. cinnamon 3 scoops vanilla ice cream Directions: Mix apple juice and ice cream in blender. Add cinnamon. Pour into glass. I recently deleted all my smoothie recipes becasue they were corrupted... But it's so easy to just add a chunk of tofu to any smoothie recipe. I just cut a big block of tofu into 4 pieces and drop in one block to the blender when you make your smoothie. My favorite is to use chocolate soy milk, a chunk of tofu, maybe some soy yogurt and some soy ice cream. Blend it all up and drink!! This is good with a banana or peanut butter or both in it, too. If I want a fruity one, I use original soy milk, tofu, soy yogurt and add a banana, applesauce or apple chunks, or any frozen fruit. The frozen fruit really thickens it up and makes it frothy. Or just use fruit juice, tofu and various frozen fruit or fresh fruit and ice cubes. You can add honey, vanilla or other flavor extracts, too. And ground nuts. Gosh, be creative and have fun!!! Sometimes I add yogurt to it. I love frozen Mixed berries, fresh spinach, some OJ and ice. A good pineapple coconut one, Use a can of coconut milk(not sweetened), 1 qt pineapple juice(unsweetened), some ice, sweetener of choice to taste and some unsweetend coconut flakes. Tropical Smoothie 1 1/2 c. Pomegranate Juice 1 Carrot chopped in large chunks 3 Celery chopped in large chunks 4 Nectarines, pits discarded 1/2 c. frozen Raspberries 2 large handfuls of Spinach 1/2 c. Wheat Grass 1 c. ice Blend together in a Vita-Mix using the tamper. This will make about 55 oz. It is so refreshing and delicious, but will have a brown color. Salt and pepper to taste. Just chop the carrots in bite size pieces and whip it all in the blender. I would have felt kinda weird drinking it, but I ate it with a spoon at room temp., so it was nearly " raw " It was awesome! I still have a few carrots in the garden, Im going to try it again. I felt so good after eating it, really energized.
