Here are a bunch of smoothie recipes for those of you who like to drink

your calories. (I prefer to eat mine and am disappointed every time I

decide to try a smoothie.) All the recipes are from the vegetariantimes

web site in August which featured smoothies.

Apricot-Papaya Shake

Amount Measure Ingredient -- Preparation Method

10 fresh apricots -- peeled and pitted,

OR 10 dried unsulphured apricots

1/2 large ripe papaya -- peeled and seeded

Fresh mint leaves for garnish -- (optional)

 

Try this beta-carotene rich drink when you need a lift. Depending on

availability, you can use fresh or dried fruit, or you can combine fresh

and dried if you'd like.

 

For fresh apricots: Put apricots and papaya in food processor or blender

and process until smooth. Add a little water if needed for consistency.

 

For dried apricots: In medium saucepan, combine dried apricots with 1/2 cup

water.

 

Cover and simmer until apricots are plumped and softened, about 5 minutes.

Transfer to food processor or blender and add another 1/2 cup water and

papaya. Process until smooth.

 

Pour or spoon mixture into serving glasses and garnish with mint leaves.

Makes 2 servings.

 

Per 1-Cup Serving: 105 Cal.; 3g Prot.; 1g Fat; 25g Carb.; 0 Chol.; 3mg

Sod.; 5g Fiber.

3/4 cup carrot juice -- chilled

3/4 cup orange juice -- chilled

1/2 cup peeled and chopped ripe cantaloupe -- 1/2

1/2 cup chopped ripe mango

1 cup chopped ripe papaya

 

This drink's vibrant orange color is enough of a reason to like it, but its

fresh fruit flavor will send you back for more. Plus, it provides a huge

dose of beta carotene and vitamins A and C.

 

In blender, combine all ingredients and process until smooth. Pour mixture

into glasses and serve. Makes 4 servings.

 

Per Serving: 77 Cal.; 1g Prot.; 0 Fat; 19g Carb.; 0 Chol.; 18mg Sod.; 2g

Fiber.

Fruity Soy Shakes

1 cup vanilla soymilk -- chilled

5 ounces Japanese-style soft silken tofu -- chilled and cubed

2 cups fresh or frozen fruit -- 1

(one or more varieties of choice)

1 tablespoon honey or brown rice syrup -- up to 2

1/2 teaspoon vanilla extract

 

Combine all ingredients in blender; process until smooth. Makes 2 shakes.

 

Variations: Peanut Butter-Banana Shake: Prepare as directed above,

substituting 1 cup sliced bananas for 2 cups fruit. Reduce honey or rice

syrup to 1 tablespoon, omit vanilla and add 3 tablespoons natural peanut

butter. Peanut Butter-Chocolate Shake: Prepare as directed above,

substituting 1 cup sliced bananas for 2 cups fruit. Omit vanilla. Add 1/4

cup natural peanut butter and 2 tablespoons unsweetened cocoa. Increase

honey or rice syrup to 3 tablespoons.

 

Per Shake: 223 Cal.; 7g Prot.; 5g Fat; 38g Carb.; 0 Chol.; 76mg Sod.; 3g

3 tablespoons honey

 

Recent studies have found that kiwifruit contains a very high percentage of

vitamin C, even more than an orange. To avoid a slight bitter taste, be

sure to use kiwifruit that are ripe. Preparation

 

In blender, combine all ingredients and process until smooth. Pour mixture

into glasses and serve. Makes 4 servings.

 

Per Serving: 185 Cal.; 3g Prot.; 1g Fat; 44g Carb.; 2mg Chol.; 34mg Sod.;

2 cups 1% or 2% or full-fat milk

1/2 cup frozen yogurt or frozen soy dessert

OR ice cream

1/2 teaspoon vanilla extract

1 dash nutmeg

1/4 cup peeled -- sliced peaches

1/4 cup fresh berries

1/8 teaspoon fresh lemon juice

 

Sometimes it's almost too hot to chew, so why not have a drinkable dessert?

Let everyone get into the action and make these smoothies right at the

table, or have a blender canister waiting in the refrigerator, ready to go.

Use the basic recipe listed below and then add your favorite ingredients,

changing the fruit as the summer progresses.

 

In a blender, combine all ingredients and blend until smooth. Pour into

chilled glasses. Freeze leftovers in individual serving dishes and enjoy

later as a frozen dessert. Makes 4 servings of about 3/4-cup each.

 

Per 3/4-Cup Serving: 113 Cal.; 5g Prot.; 5g Fat; 13g Carb.; 19mg Chol.;

1/2 peeled and frozen banana -- (see Note)

1/3 cup fresh fruit chunks such as cantaloupe or

nectarine

1/4 cup plain yogurt or soy yogurt -- (optional)

2 tablespoons soy-based protein powder

1/2 cup low-fat milk or soymilk -- up to 3/4

 

Half a frozen banana gives smoothies a wonderful, milk shake texture

without the ice cream and its fat and sugar.

 

Place all ingredients in blender; process until smooth. Add additional

milk or soymilk to achieve desired thickness. Makes 1 serving.

 

Note: In the Vegetarian Times test kitchen, we buy bananas when they are on

sale, peel and cut them in half crosswise then freeze them in small plastic

bags.

1/2 cup unsweetened applesauce

2 ripe medium bananas

1/2 cup plain low-fat/ nonfat yogurt or soft tofu -- drained

2 teaspoons vanilla extract

1 1/2 tablespoons honey

 

Blueberries, bananas and apples combine for a scintillating violet-colored

drink that's a powerhouse of vitamin C, potassium and flavonoids. It also

can be made with ripe fresh strawberries, raspberries or blackberries.

 

In blender, combine all ingredients and process until smooth. Pour mixture

into glasses and serve. Makes 4 servings.

of vitamin C, potassium and iron.

 

In a blender or food processor, puree all ingredients together until

consistency is smooth. Makes 2 servings.

1 papaya -- peeled

seeded and cubed

1 kiwifruit -- unpeeled

and sliced into rounds -- (optional)

1 fresh or frozen banana -- sliced

1 cup frozen strawberries

8 ounces nonfat plain yogurt

2 cups orange juice

 

For potassium and vitamins A and C, it's hard to beat this smoothie.

Papayas and kiwifruit can be found year-round in most places; if not, add

more bananas and strawberries.

 

In a bender of food processor, pur‚e together all ingredients until

consistency is smooth. Makes 2 servings.

 

Variation: In either smoothie, substitute other fruits for different

flavors--mangos and figs are particularly good. Mangos lend a cream

texture and sweet flavor; figs also add a unique sweetness.

 

Helpful Hint: Using frozen fruit gives a pleasing chill to the smoothies.

Buy fruit in season, then freeze in freezer bags to use later. When

bananas become overripe, peel and freeze in freezer bags.

 

Per Serving: 381 Cal.; 9g Prot.; 2g Fat; 83g Carb.; 3mg Chol.; 95mg Sod.;

Hello,

 

" Great American Smoothies " by Gabriel Constans is a great book

with a great variety of simple yet protein/vitamin packed smoothies

including one called " Morning Lift Off " . They were

created for the authors children but work great for adults too! The

recipes cater to those who are vegan (the alternative of using Soy milk

is always available). I have heard a second edition is due out

sometime this year.

 

Here is one from the book using Dates:

 

Almond Lassi

1 cup almond milk

2 dates (chopped)

1/2 tsp ground cardamon

1/4 tsp grd black pepper

 

blend all ingredients in blender for a minute or so.

 

Some of the recipes use ice cubes or frozen fruit....I suppose you can do

what you want in the end!

Here are some of my favorite smoothie drinks using silken tofu~~~~

 

Strawberry

8 oz silken tofu

10 fresh strawberries

1/4 tea vanilla

2 pkg sweetner or sugar

2-3 ice cubes

 

 

Banana

8 oz silken tofu

2 ripe bananas

2-3 ice cubes

 

Choco-Banana

see banana recipe

add: 2t cocoa powder

 

Nectarine or peach shake

8 oz silken tofu

2 nectarines or peaches

2 pkg sweetner or sugar

2-3 ice cubes

 

 

 

Raspberry Watermelon

8 oz silken tofu

1 C raspberries

1 C watermelon

2 pkg sweetner or sugar

 

 

 

During the summertime I use the fresh fruit, because it tastes to

wonderful and is plentiful. You can use frozen fruit, if you do, you

may been to add a bit of water or soy milk, but eliminate the ice cubes.

This is my favorite smoothie recipe of all time.

 

Mango-Peach Smoothie

1/2 fresh mango, chopped up

1 C frozen peach slices

1/2 banana

1/4 C orange juice

1/2 C mango or peach frozen sorbet

1/3 C silken tofu (optional)

 

Put frozen peaches in blender and chop up. Add remaining ingredients and

blend until smooth.

Enjoy! (Recipe make 1 large smoothie or 2 regular size smoothies)

OK - not exactly a healthy meal, but, YUM!

 

Apple Pie Shake

 

Ingredients:

 

1/2 cup apple juice

1/2 tsp. cinnamon

3 scoops vanilla ice cream

 

Directions:

 

Mix apple juice and ice cream in blender. Add cinnamon. Pour into glass.

Simple, easy, and delicious!

 

Serves: 1

 

Preparation time: 5 minutes

I posted lots of smoothie recipes -- oh wait that was on Quick Vegetarian I

think. I recently deleted all my smoothie recipes becasue they were

corrupted...

 

But it's so easy to just add a chunk of tofu to any smoothie recipe. I just

cut a big block of tofu into 4 pieces and drop in one block to the blender

when you make your smoothie.

 

My favorite is to use chocolate soy milk, a chunk of tofu, maybe some soy

yogurt and some soy ice cream. Blend it all up and drink!! This is good

with a banana or peanut butter or both in it, too.

 

If I want a fruity one, I use original soy milk, tofu, soy yogurt and add a

banana, applesauce or apple chunks, or any frozen fruit. The frozen fruit

really thickens it up and makes it frothy.

 

Or just use fruit juice, tofu and various frozen fruit or fresh fruit and ice

cubes. You can add honey, vanilla or other flavor extracts, too. And ground

nuts.

I often just put in some frozen fruit, fresh spinach or cabbage, juice of some

kind, some. Sometimes I add yogurt to it. I love frozen Mixed berries, fresh

spinach, some OJ and ice. A good pineapple coconut one, Use a can of coconut

milk(not sweetened), 1 qt pineapple juice(unsweetened), some ice, sweetener of

choice to taste and some unsweetend coconut flakes.

 

Tropical Smoothie

 

1 1/2 c. Pomegranate Juice

1 Carrot chopped in large chunks

3 Celery chopped in large chunks

4 Nectarines, pits discarded

1/2 c. frozen Raspberries

2 large handfuls of Spinach

1/2 c. Wheat Grass

1 c. ice

 

Blend together in a Vita-Mix using the tamper. This will make about 55 oz.

It is so refreshing and delicious, but will have a brown color. Remember

coffee, tea,and hot chocolate are all brown. LOL

I recently made a carrot " soup " of just whole carrots, apple cider, fresh ginger

and abt 3oz tofu. Salt and pepper to taste. Just chop the carrots in bite size

pieces and whip it all in the blender. I would have felt kinda weird drinking

it, but I ate it with a spoon at room temp., so it was nearly " raw " It was

awesome! I still have a few carrots in the garden, Im going to try it again. I

felt so good after eating it, really energized. Daphne
